Holidays

I was informed by my mom that at our family celebration for Christmas this year we are not going to be having turkey, ham, duck, goose, or even the turducken I wanted to make, but instead we are appetizers.

This came to some what of a surprise to me, and saddened me at first because I have really wanted to make a turducken from scratch and actually have all the ingredients needed for it. After some soul searching and research I figured that this is going to be great for me.

My next term in school is CA2050 Classical French, and Garde Mange. At the end of the class this term we have to do a salon buffet of five different appetizers. Thinking about all of this I have started going through my new cook books looking at various options and appetizers and I have found a few that appeal to me, but I pose the question to everyone out in the www, what do you enjoy. What have you had at restaurants, or that a family member has mad that you enjoyed?

Difficulty

I am at school, and just had lunch. It was an un healthy lunch, but we deal with what we can. It is a tough time of year to follow a diet per say. I have decided that until after the new year I am not going to follow an eating plan. I am going to try to just eat in moderation.

Moderation is important. I have noticed in the past with dieting that if you cut everything fun and "unhealthy" out of my diet after a few weeks I would dropped the diet completely and being eat until I gained more weight than I managed to drop.
So now I am trying to take all the experiences that I have done in the past, and some of the things that I have been reading.

Working, in the kitchen and with myself

If you read my other blog http://dojoofcooking.blogspot.com/ I am a culinary arts student who has been working in the industry for half of my life. My family and I and moving to Louisiana in the summer, and I will more than likely be doing my externship at a golf resort in South Carolina. These are to very warm climates, and I weigh 291 pounds. I need too loose weight and become healthier. I want to be healthier, neigh I need to be healthier. This is going to be my chronicles of my weight loss and hopefully ability to maintain this weight loss. I will post healthy recipes I come up with along with pictures of the food. If everyone wants to comment, and give wishes that would be more than welcome.
